Grandaddy's One Pot Shrimp

I had a reeeaaaaally long day at work today. Fortunately I knew it was going to be a doozy so I squeezed in a 7 minute, yes 7 minute mini workout of pull ups, push ups and squats in my back yard from 9:14-9:23 am in between dropping off Mighty Mouse at daycare and leaving to pick my boss up in Glendale at 10 am. Thank God for the rig. Got my first set of 10 consecutive pull ups too! But I digress. 

First stop was Glendale to pick up my boss who had flown in for the day and was at our new office. Then I drove him to downtown LA for our first meeting. Trying to find a building in downtown LA is almost always a total shit show, not to mention while trying to have a stimulating conversation with the boss man. I literally got honked in the same spot twice for making an illegal U-turn in the middle of the street, missing my turn, ending up in the same spot, and making the same illegal U turn again. Shit. Show.

So we had our meeting with our prospective client, then took them to lunch where I was of course my usual charming self until I quieted the room when we started talking about kids and I said mine wouldn't be going to college. More on that later. But mostly the meeting was a success because I had a nicoise salad with poached salmon for the first time and it was the bomb. Lip smackin. Mmm hmmm. 

Then it was back in the car and a drive north an hour and a half for a meeting halfway to Santa Barbara. This meeting lasted over three hours. No one left the room for the entire 3+ hours. I split my time in this meeting between cursing myself for not refilling my coffee before I entered, and wondering if it would be appropriate for me to eat a snack. How do people sit that long?! And how do they wear work clothes all day?! My ass might never recover.  Then we got back in the car to drive back to LA. I was a shell of the human I had started out with at the beginning of the day, a shell with a squishier derriere. 

What's the moral of this story? You need simple shit to cook after a long day or you're going to make bad choices. And lots of tequila. Oh wait, maybe that was the bad choice. Well, choose your battles people. 

This is where granddaddy's one pot shrimp comes into play. This is so stupid easy, even I can do it. Actually the first time I did it, I used too much corn starch and made what appeared to be shrimp glue. So don't do that, but otherwise it's very hard to screw up. You can serve this with GrandMommy's sides (coming to the blog soon) but I do it with just spinach and sweet potato because I'm really lazy and usually have had too much tequila. 

Grandaddy's One Pot Shrimp

Serves: 2-4 people

Ingredients

For the shrimp:

  • 1.2 pounds raw shrimp, size 21/25 per pound
  • 1 tablespoon corn starch (can substitute coconut flour for pure Paleo)
  • 1 tablespoon Tony Chachere’s Original Creole Seasoning (can substitute 1 tablespoon Chipotle powder and 1 teaspoon garlic salt OR 1 tablespoon Famous Dave’s Rub which has the least kick)
  • 1 tablespoon oil or ghee, for greasing the pan.

For the spinach:

  • 1 10 oz bag pre-washed spinach
  • 2 teaspoons minced garlic (I like to buy mine pre-minced so there is no chopping, and use Spice World’s Minced Garlic
  • 1 tablespoon oil or ghee, for greasing the pan.
  • 1 tablespoon oyster sauce, optional

For the sweet potato:

  • 2 medium sized sweet potatoes
  • Salt and pepper, to taste
  • Butter or nonfat sour cream to taste (optional, I don’t use butter to keep the meal lower in fat)

Instructions

  1. Turn oven to 175 degrees F.
  2. Rinse sweet potatoes with water and poke several times with fork or knife. Place on plate in microwave and microwave for 4 minutes per side.
  3. Meanwhile, remove tails and shells from shrimp and discard. Pat shrimp dry with paper towel.
  4. In a medium bowl (or I just use a big plate), add seasonings to shrimp and mix well.
  5. Heat a saute pan (the best is granddaddy’s one pot) to medium-high and grease. Once hot, cook shrimp in a single layer, 2 minutes on the first side, then flip and cook 1 minute on the second side. Do two batches if necessary. Remove shrimp to plate in oven.
  6. Reheat pan and grease. Add minced garlic and saute for 10 seconds. Add spinach - the entire bag can fit in the pan as long as you add it in batches and wait for each batch to cook down. Stir fry until cooked down and wilted, about 2 minutes. When done, add oyster sauce if desired and stir.
  7. Serve! Serve sweet potato cut in half with salt and pepper, butter or sour cream to taste. Be happy!
